Prepare a stiff dough with the flour, olive oil, salt and water. Leave, covered, for an hour.
Mix cheese, egg, cinnamon and sugar.
Roll out pieces of dough 1/8 inch thick, onto a floured board and cut into small rounds 3 inches in diameter. Place 1 tablespoon of the cheese mixture on each round of dough, moisten edges; fold over and seal well, pressing the edges together with a fork. Deep fry in hot oil until golden brown. Spinkle with sugar and cinnamon and serve hot. |
