Eggs with Zucchini -- Avgha Me Kolokithakia |

Ingredients |

2 lbs Zucchini 1/2 cup Butter Salt Pepper chopped or dill Parsley 6 beaten Eggs 4 tablespoons Grated Cheese

Preparation |
Wash the zucchini and cut in thick slices. Heat the butter in a large frying pan, add zucchini, salt, pepper an d chopped parsley. Cover and cook for about 30 minutes. Add eggs, sprinkle the cheese over the top and cook, covered, for 3 to 4 minutes. Serves 4.
Note: Cook 2 tomatoes, peeled and finely diced with the zucchini. |
