Ingredients |

2 1/2 lbs. Quices 4 cups Water 3 lbs. Sugar the juice of 1 Lemon 1 teaspoon Vanilla 1/2 cup blanched and halved Almonds

Preparation |
Peel the quices and grate coarsley. Put in a large saucepan, add water, cover and cook over a moderate heat until soft. Add sugar and cook stirring, over a medium heat, until the syrup is thick. Towards the end, add the lemon juice and the almonds. Add vanilla. |
