Fish Soup -- Psarosoupa |

2 1/2 - 3 lbs. Fish 8 cups Water 2 large, sliced Onion 2 diced Carrots 2 stalks, chopped Celery chopped Parsley Salt Pepper 1/2 cup Olive Oil 4 diced Potatoes

Preparation |
Clean and was the fish. Cut into thick slices. Put the water into a saucepan and bring to a boil. Add the vegetables, except potatoes, salt, pepper and oil. Boil for 45 minutes. Reduce heat to simmering point, add the pieces of fish and potatoes. Simmer for 15 minutes. |
