Boiled Octopus -- Htapothi Vrasto
 
Ingredients
1 weighing about 3 pounds Octopus
4 cups Water
3 cloves garlic, crushed Garlic
3/4 cup Olive Oil
1/4 cup Vinegar
as desired Pepper
chopped Parsley
 
Preparation
Clean the octopus and put into a pan; add water and cook it over a moderate heat until it becomes red and tender. Drain, peel off the skin, and cut into small pieces.
Mix the garlic, olive oil, vinegar, pepper and parsley. Pour dressing over the octopus. Will keep covered in the refrigerator for 3 to 4 days.
